Green Tea Seltzer
Ingredients
Water
- Base: 1 gallon
Flavorings
- Green Tea: 8 bags
Optional
- Honey: 1/4 cup
Directions
- Steep tea bags for 5 minutes
- Dissolve honey in hot tea
- Chill and keg for 48 hours under 15psi of CO2
Jamaica (Hibiscus) Seltzer
Ingredients
Water
- Base: 2 quarts
Flavorings
- Dried Jamaica Flower: 1 cup
- Sugar: 1/2 cup
Optional
- Sugar: 1/4 cup
Directions
- Combine water and sugar and bring to a boil
- Remove from heat
- Steep Jamaica flowers for 5 minutes
- Strain out Jamaica flowers
- Chill and keg for 48 hours under 15psi of CO2
Lime Soda
Ingredients
Water
- Base: 7.5 cups
Flavorings
- Lime juice: 1.5 cups
- Sugar: 3/4 cup
Directions
- Combine water and sugar and bring to a boil
- Remove from heat
- Let cool to room temperature
- Add lime juice
- Chill and keg for 48 hours under 15psi of CO2
Ginger Ale
Ingredients
Water
- Base: 1 gallon
Flavorings
- Chopped Ginger: 1 cup
- Sugar: 2 cups
- Lime juice: 2 tablespoons
Directions
- Combine 1/2 gallon of water, ginger, and sugar and bring to a boil
- Remove from heat and let cool
- Add remaining 1/2 gallon of water and lime juice to ginger concentrate
- Strain out ginger
- Chill and keg for 48 hours under 15psi of CO2
Blackberry Kombucha
Ingredients
Water
- Base: 1 gallon
Flavorings
- Black Tea: 4 bags
- Sugar: 1 cup
- Blackberries (crushed): 1 lb
Active
- Kombucha SCOBY: 1 puck
Optional
- Sugar: 1/4 cup
Directions
- Steep tea bags for 5 minutes
- Cool tea to room temperature
- Add SCOBY to tea
- Ferment for 7 days at room temperature in a dark place
- Remove Scoby (save SCOBY in 2 cups of kombucha for future use)
- Add crushed blackberries
- Bottle: Add optional sugar for secondary carbonation
- Keg: Strain out blackberries, chill, and keg
