Ingredients
Water
  • Base: 1 gallon
Flavorings
  • Green Tea: 8 bags
Optional
  • Honey: 1/4 cup
Directions
  • Steep tea bags for 5 minutes
  • Dissolve honey in hot tea
  • Chill and keg for 48 hours under 15psi of CO2

  • Base: 2 quarts
Flavorings
  • Dried Jamaica Flower: 1 cup
  • Sugar: 1/2 cup
Optional
  • Sugar: 1/4 cup
Directions
  • Combine water and sugar and bring to a boil
  • Remove from heat
  • Steep Jamaica flowers for 5 minutes
  • Strain out Jamaica flowers
  • Chill and keg for 48 hours under 15psi of CO2

Flavorings
  • Lime juice: 1.5 cups
  • Sugar: 3/4 cup
Directions
  • Combine water and sugar and bring to a boil
  • Remove from heat
  • Let cool to room temperature
  • Add lime juice
  • Chill and keg for 48 hours under 15psi of CO2

  • Base: 1 gallon
Flavorings
  • Chopped Ginger: 1 cup
  • Sugar: 2 cups
  • Lime juice: 2 tablespoons
Directions
  • Combine 1/2 gallon of water, ginger, and sugar and bring to a boil
  • Remove from heat and let cool
  • Add remaining 1/2 gallon of water and lime juice to ginger concentrate
  • Strain out ginger
  • Chill and keg for 48 hours under 15psi of CO2

  • Base: 1 gallon
Flavorings
  • Black Tea: 4 bags
  • Sugar: 1 cup
  • Blackberries (crushed): 1 lb
Active
  • Kombucha SCOBY: 1 puck
Optional
  • Sugar: 1/4 cup
Directions
  • Steep tea bags for 5 minutes
  • Cool tea to room temperature
  • Add SCOBY to tea
  • Ferment for 7 days at room temperature in a dark place
  • Remove Scoby (save SCOBY in 2 cups of kombucha for future use)
  • Add crushed blackberries
  • Bottle: Add optional sugar for secondary carbonation
  • Keg: Strain out blackberries, chill, and keg
